It’s the weekend! 

I was looking for something easy to make that will let me go about my day and not have to worry about making a big meal. I thought about my crockpot, so I went to Pinterest and found this great recipe. I did make some modifications for more flavor, but the ease of making it makes it worth it! 2 pounds boneless, skinless chicken breasts or tenderloins
1/2 cup chicken broth
1 cup Caesar dressing
1/2 cup shredded Parmesan cheese
3 cups romaine lettuce
6 large flour tortillas, room temp
2 cloves of garlic
1 tablespoon of Italian seasoning


1. Spray the inside of crock pot with cooking spray or olive oil. Pour the chicken broth. Place the chicken, garlic, and Italian seasonings in the broth and cover crock pot with lid.
2. Cook on low heat 4 – 5 hours OR on high heat for 2 1/2 hours. Be sure to open the lid to stir once or twice.
3. Remove chicken from crock pot and shred chicken. Leave about 2 tablespoons of broth in the bottom of the pot, pour out the rest.
4. Place shredded chicken back in the crock pot. Put the pot on ‘warm’ setting. Stir in dressing, if you’d like.
5. Warm tortilla in microwave or leave on counter at room temperature. Top each tortilla with 1/2 cup of lettuce, a little Parmesan cheese, and 1/2 cup of chicken and add a line of Caesar dressing. Wrap up tightly and serve!

Yields: 6 – 8 servings
